In writing his latest cookbook, Avec Eric: A Culinary Journey with Eric Ripert, celebrity- chef Eric Ripert envisioned himself as a “home cook who invited his friends for a simple meal.” The 100+ recipe tour-de-force begins at Le Bernadin, Ripert’s current haunt, then sets out for California, Tuscany, the Cayman Islands, and beyond. There are so many cookbooks I use for inspiration on a regular basis. A Return to Cooking, by Eric Ripert, and The French Laundry Cookbook, by Thomas Keller, are both great because they talk about more than recipes. They talk about inspiration, the importance of fundamentals, and those things appeal to me as a restaurant professional.

There is one traditional recipe cookbook that I really do use a lot and draw much inspiration from. The C.I.A’s Italian Cooking.  One of its three authors, Alberto Vanoli, is an amazing Italian chef, who I had the privilege of working with a long time ago at the opening of the Ritz-Carlton Philadelphia. This book is full of beautiful, simple, traditional, Italian food. Every time I use this book it is like reconnecting with my old Chef, and simultaneously revisiting Italy.

First Friday at the Farm January: Beef and Olive Oil

Visit our Pennington market January 10th from 4pm-7pm for our monthly First Friday (SECOND Friday now due to weather!) Meet TWO of our favorite producers and taste a delicious recipe made with both of their products: organic, single grove, Tunisian Olive Oils from Mediterranean Delicacies and pasture raised, local meats form Tullamore Farms.

Abdel’s family in Tunisia takes great care of their New Jersey Grown olive grove and for the process of extracting their buttery, slightly spicy oils. The results benefit us lucky few in Pa and New Jersey who live near Abdel’s home away from home!
Jeanmarie and her daughter raise a small herd of steer and lambs in Stockton, NJ using the best practices possible. Their award winning, pure tasting meats have great flavor and maximize nutritional benefits of these products.

Abdel is preparing a Tullamore sirloin roast with his olive oil and fresh herbs.  There will be fresh baguettes and local cheese for non-meat eaters. As always, enjoy live music by Jim Arkus and sip some complimentary wine & beer. Get your weekend supplies and have fun while you’re at it!

Pasture-Raised Eggs for Dummies!

There’s a new egg in town.

A pastured egg.

Actually, these little ladies have been around for ages, but are only now getting the recognition they deserve.

So what are they? And why should you care?

Simply put, pastured eggs—or pasture-raised eggs as they’re sometimes called—are eggs hatched from hens that live on pastures. These lucky girls have access to live worms, grubs, seeds, and grasses; and are free to spend their days roaming about special enclosures. Because they live very much the way they would in the wild—as omnivores, with fresh air to breathe, and unspoiled pasture to forage—their eggs are healthier, tastier, and more nutritious.

Let’s face it: not all eggs are created equal. While terms like “Free Range” and “Cage Free” conjure images of healthy hens, they are often misleading. “Free Range”, as it’s regulated, only requires chickens to spend some portion of their lives outside; how much, or under what circumstances, is anybody’s guess. “Cage Free” refers merely to the absence of cages:  these poor birds are often crammed by the thousands into gloomy, windowless warehouses. Even “New Jersey Grown” can be ambiguous, pertaining only to diet; not housing or grazing conditions.

At Blue Moon Acres, we offer only pastured eggs. Our hens receive no antibiotics or harmful additives, and enjoy the protection of two spacious houses. The houses are relocated every week, to afford our hens new grazing opportunities, and to keep the pasture well-fertilized. All of which makes for a healthier, tastier, more nutritious egg. With more carotenes, omega-threes, vitamins A, D, and E than conventional brands, our pasture-raised eggs are the obvious choice!
